Traditionally-inspired recipes from the
culturally-rich Laguna Indian Pueblo,
where good food has been perfected for centuries!
Chile Chicken Breasts
(PFS) Roasted Red Chile Sauce
Boneless Chicken Breasts (desired amount)
2 Tbs flour
½ cup chopped onion
2 Tbs olive oil
Heat large skillet, add oil, and sauté chopped onions for 5 minutes. Coat chicken
breasts with flour and shake off all excess. Place in pan with onions, turning gently
until golden. Smother in our (PFS) Roasted Red Chile Sauce. Cover and simmer for
20 minutes.
Indian Summer Guacamole
3 Soft avocados
2 Tbsp sour cream
¼ cup Indian Summer Salsa
Lemon Juice
Crush avocados. Add sour cream and Indian Summer Salsa and stir. Arrange nicely
in lettuce-lined bowl. Garnish with chopped green onion tops. Squeeze on the lemon
juice to cover. Chill and enjoy.
Calabacitas
2 zucchini squash, cubed
2 yellow summer squash, cubed
1/4 yellow onion, chopped
2 ears fresh corn on the cob, shelled,
or 1 1/2 cups frozen whole kernel corn
2 Tbsp. Olive oil
1/4 cup Indian Summer Salsa
Heat large skillet on medium. Add olive oil and onion. Saute onion until transparent.
Turn heat up to medium high. Add squash and corn. Fry turning a few times with a
spatula. When the squash is soft (about ten minutes) add our (PFS) Indian Summer
Salsa and cover. Reduce heat to low for two minutes.
Ideas for (PFS) Roasted Red Chile Sauce:

Add 1/4 cup to your existing spaghetti sauce recipe.
·
Baste ribs, chicken, steak, or pork chops while grilling.
·
Add a spoonful to a bowl of chicken soup.
·
Use as a taco sauce.
·
Smear on turkey or chicken before roasting.
·
Chip and nacho dip.
·
Add to meatloaf recipe instead of other liquid.
