Indian Summer Salsa
While creating this beautiful and rich salsa, I thought of my village of Mesita,
and how it once was fields of corn, squash, chile, and peach trees heavy with
fruit. In the early 1800s the people built permanent rock structures in lieu of
traveling back and forth to Old Laguna where they lived. During the summer
months of this ancient time, they slept under the stars and tended to their
fields during the day. Indian Summer Salsa is reminiscent of the fields
overflowing with nutritious vegetables, which my ancestors reaped for centuries.
Ingredients: New Mexico roasted and peeled green chile, yellow hot chile, crushed tomatoes,
onion, garlic, yellow squash, vinegar, herbs, water, salt.

involves roasting dried red chile in the mud oven after bread has been removed.
The chile roasts with the lingering aromas of yeast bread and cedar wood; the
